I'm a HUGE fan of Guy Fieri's Food Network show, "Diners, Drive-Ins & Dives"!
In fact, I;m in the middle of a big binge, I'm in the middle of season 16...which means I'm halfway there to being all caught up!
One of the things I love about the show is watching all of the unbelievable chefs creating great dishes that I have never heard of before.
One of those dishes is the traditional Mexican dish, Posole!
Posole is a soup made with cabbage, hominy and pork, among other things, and it has a little heat...but not enough to have you running for a glass of milk!
Anyway, inspired by Guy & Triple D, I made some Posole for the first time this weekend. Now, I made the crock pot version so I could just do the "set it and forget it" kind of thing.
I thought I'd post the recipe, just in case you'd like to try it, too!
Quick tip...
Don't stray from the reciple like I did and use bagged hominy instead of canned.
You may end up with a porridge instead of a soup like I did! TRhen you'll be adding so much water, you'll dilute the broth!
Enjoy!
